Spinach Dip

Makes 2

Ingredients

1 tablespoon olive oil
2 cups fresh spinach
1 tablespoons fresh parsley
½ tablespoon dried dill
1 teaspoon onion powder
½ teaspoon salt
¼ teaspoon ground black pepper
½ cup mayonnaise
¼ cup sour cream
1 tablespoon lemon juice

Instructions

Place all ingredients into a bowl and mix until smooth.

 

Sweet Onion Cheesy Avocado Dip

Makes 2 Sweet Onion Cheesy Avocado Dip

Ingredients

220g cream cheese, softened
1 cup cheddar, shredded
1/2 avocado, ripe, peeled and seeded
1/4 onion, diced
1/4 clove garlic, crushed
1/4 cup green chilies

Instructions

Put all the ingredients into a food processor and mix until smooth texture.
Pour into serving bowl and place the avocado seed in the middle.
If not ready to serve immediately, cover it with plastic wrap.

*Putting the seed in the middle of the bowl and dip helps keep the dip fresh for longer.

Avocado Salsa

Makes 4 Fresh & Wild Avocado Salsa

Ingredients

2 avocados, ripe
1 tablespoon olive oil
1 tablespoon lemon juice
1 tablespoon lime juice
2 plum tomatoes, diced
1/4 cup black or green olives, sliced
1/2 cup corn
1/4 cup cucumber, diced
1/2 bunch green onion
1/4 garlic clove
¼ cup jalapenos
1 cup water
ground cumin and coriander and salt for flavouring

Method

First, mix lemon juice, lime juice, olive oil and a pinch of salt with 1 cup water. Place in bowl in fridge.
Dice up rest of ingredients.
In a separate large bowl, add all ingredients except the avocado. and mix until well blended. Pour the mixture from the fridge and add spices for flavouring.
Toss well.
When ready to serve, dice the avocados. Add avocado to mix and toss.

Sour Cream Onion Dill Dip

Makes: 1 cup Sour Cream Onion Dill Dip

Ingredients

1 cup sour cream
¼ small onion, chopped
1 tablespoon dill weed
½ teaspoon salt

Method

Pour the sour cream, chopped onion, salt and dill weed into a food processor and process until smooth texture.

 

Salsa Dressing

Makes 2 salsa

  • 1/4 cup salsa sauce
  • 30 ml olive oil
  • 2 tablespoons sour cream
  • 2 tablespoons mayonnaise
  • 1.5 tablespoons apple cider vinegar
  • 1 teaspoon chili powder
  • 1/2 garlic clove

Instructions

Add and mix all ingredients together, until smooth texture.
