Ingredients

  • 1.5 cups flour
  • 1/2 cup natural or wheat bran
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 cup blueberries
  • 4 eggs
  • 4 teaspoons olive oil
  • 1/2 cup natvia or stevia
  • 1 cup milk
  • 1 tablespoon vanilla extract

Method

1. Preheat oven to 320 degrees
2. Mix together the flour, bran, baking powder and baking soda
3. Add the blueberries
4. In a separate bowl whisk the remaining ingredients
5. Combine both mixtures and mix well
6. Fill the prepared muffin cups
7. Bake for approx. 20 minutes
