Low Carb Rosemary Oven Fried Chicken

Ingredients

  • 1/2 cup buttermilk
  • 2 tablespoons mustard
  • 4oz chicken cutlets
  • 1/2 cup breadcrumbs
  • 1/4 cup cashews (finely chopped, roasted)
  • 1 teaspoon fresh rosemary
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon red pepper
  • 4 teaspoons honey
  • cooking spray

Method

1. Preheat oven to 325 degrees
2. In a small bowl, combine buttermilk and stir. Coat chicken
3. In a small skillet, heat over a medium flame. Add breadcrumbs to pan and cook until golden.
4. Combine breadcrumbs, cashews, rosemary, salt and red pepper) in a shallow dish. Remove chicken from buttermilk mixture and cover in breadcrumb mixture
5. Bake at until chicken is done
6. Drizzle honey
